Sous Chef with a Passion for Fire Cooking and a Farm-to-Table Philosophy

Are you a culinary artist who thrives in the environment of farm-to-table cuisine and is inspired by the art of fire cooking? If your creativity blooms in a kitchen where local, sustainable sourcing is paramount, we invite you to join us as our Sous Chef at Cuyama Buckhorn, our esteemed boutique hotel and gastronomic haven.


Here, you will ignite your passion for culinary craftsmanship using open flames, wood-burning grills, smokers, and wood-fired ovens. Your role will be pivotal in transforming these fundamental elements into remarkable dishes that resonate with our guests. You'll also foster our deep commitment to sustainability by partnering with local producers to curate menus that highlight the best of the region.


As our Sous Chef, you'll play a crucial role in leading our culinary brigade. Your expertise will not only shine in the kitchen through your ability to maintain high standards under pressure and direct the preparation, planning, and execution of all menu items, but also in your capacity to mold our food's story. You'll be instrumental in pricing menu items, ordering supplies, managing records, and upholding the exemplary condition of our kitchen and equipment.

SKILLS & QUALIFICATIONS

  • A background of at least 2 years in a kitchen leadership role within large-scale, cuisine-driven operations, preferably as a Sous Chef or Kitchen Lead.
  • Demonstrated leadership qualities, with the ability to inspire, teach, coach, and keep calm in a busy kitchen environment.
  • Exceptional time management and the capability to enhance service by efficiently managing kitchen stations and expediting.
  • Strong financial skills with experience in cost control, labor management, and maximizing profitability.
  • A dedication to mentorship, ready to guide a large and diverse team.
  • A love for learning and self-development within the culinary arts.
  • A zealous advocate for using locally-sourced, sustainable ingredients, and a specialist in fire cooking techniques.
  • Dynamic, with proficient communication skills, and well-honed organizational abilities.
  • Food Handler Certification and a comprehensive understanding of food safety practices.

RESPONSIBILITIES

  • Direct daily kitchen operations, ensuring pristine conditions in preparation and storage areas.
  • Oversee culinary stations, ensuring impeccable preparation and presentation of every dish.
  • Collaborate closely with kitchen and dining room staff for seamless service delivery.
  • Work in tandem with the Executive Chef to foster a positive and collaborative environment, and maintain "A" level health code compliance across all operations.
  • Engage in active mentorship and staff development, offering constructive feedback and professional growth pathways.
  • Manage kitchen staff schedules, maintenance, and uphold the continuous cycle of innovation in menu development in conjunction with the General Manager.
  • Maintain close ties with local farm and ranch vendors, and play a key role in event planning and off-property catering.
